Quick gourmet dinner idea

Pesto Chicken Pizza


- 1 Boboli or other premade pizza crust
- Mozzarella cheese ( 1 and 1/4 cups)
- Parmesan cheese (1/4 of a cup)
- 1 grilled Chicken breast

For Sauce:
- 3 cups fresh basil leaves
- 1 1/2 cups chopped pine nuts
- 4 cloves garlic, peeled
- 1/4 cup grated Parmesan cheese
- 1 cup olive oil
- salt and pepper to taste


To make the pesto sauce:
In a food processor, blend together basil leaves, nuts, garlic, and Parmesan cheese. Pour in oil slowly while still mixing. Stir in salt and pepper.

To Assemble the pizza:
Preheat the oven to 450
Spread out the pesto sauce around the crust (freeze leftover to use again later)
Sprinkle some of the mozzarella over the sauce
Add pieces of sliced chicken breast
Add the rest of the mozzarella cheese
Add the Parmesan on top of that

Bake for 8-10 minutes.
