A Barefoot Contessa Dinner

Ina Garten, aka the Barefoot Contessa, is one of our favorite chefs on TV.  Her recipes are classic with a twist and always delicious! Try these Italian themed recipes: Chicken Piccata, Roasted Garlic Potatoes and a Pear and Apple Crisp!


Chicken Piccata
Ingredients:
  • 4 split (2 whole) boneless, skinless chicken breasts
  • Kosher salt and freshly ground black pepper
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/2 tablespoon water
  • 1 cup seasoned dry bread crumbs
  • Good olive oil
  • 3 tablespoons unsalted butter, room temperature, divided
  • 1/3 cup freshly squeezed lemon juice (2 lemons), lemon halves reserved
  • 1/2 cup dry white wine
  • Sliced lemon, for serving
  • Chopped fresh parsley leaves, for serving
Directions:

Preheat the oven to 400 degrees F. Line a sheet pan with parchment paper.
Place each chicken breast between 2 sheets of parchment paper or plastic wrap and pound out to 1/4-inch thick. Sprinkle both sides with salt and pepper.
Mix the flour, 1/2 teaspoon salt, and 1/4 teaspoon of pepper in a shallow plate. In a second plate, beat the egg and 1/2 tablespoon of water together. Place the bread crumbs on a third plate. Dip each chicken breast first in the flour, shake off the excess, and then dip in the egg and bread crumb mixtures.
Heat 1 tablespoon of olive oil in a large saute pan over medium to medium-low heat. Add the chicken breasts and cook for 2 minutes on each side, until browned. Place them on the sheet pan and allow them to bake for 5 to 10 minutes while you make the sauce.

For the sauce, wipe out the saute pan with a dry paper towel. Over medium heat, melt 1 tablespoon of the butter and then add the lemon juice, wine, the reserved lemon halves, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Boil over high heat until reduced in half, about 2 minutes. Off the heat, add the remaining 2 tablespoons of butter and swirl to combine. Discard the lemon halves and serve 1 chicken breast on each plate. Spoon on the sauce and serve with a slice of lemon and a sprinkling of fresh parsley.


Garlic Roasted Potatoes
Ingredients:

  • 3 pounds small red or white potatoes
  • 1/4 cup good olive oil
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons minced garlic (6 cloves)
  • 2 tablespoons minced fresh parsley
Directions:

Preheat the oven to 400 degrees F.
Cut the potatoes in half or quarters and place in a bowl with the olive oil, salt, pepper, and garlic; toss until the potatoes are well coated. Transfer the potatoes to a sheet pan and spread out into 1 layer. Roast in the oven for 45 minutes to 1 hour or until browned and crisp. Flip twice with a spatula during cooking in order to ensure even browning.
Remove the potatoes from the oven, toss with parsley, season to taste, and serve hot.

 
Pear and Apple Crisp
Ingredients:

  • 2 pounds ripe Bosc pears (4 pears)
  • 2 pounds firm Macoun apples (6 apples)
  • 1 teaspoon grated orange zest
  • 1 teaspoon grated lemon zest
  • 2 tablespoons freshly squeezed orange juice
  • 2 tablespoons freshly squeezed lemon juice
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
For the Topping:
    • 1 1/2 cups all-purpose flour
    • 3/4 cup granulated sugar
    • 3/4 cup light brown sugar, lightly packed
    • 1/2 teaspoon kosher salt
    • 1 cup old-fashioned oatmeal
    • 1/2 pound (2 sticks) cold unsalted butter, diced

    Directions:

    Preheat the oven to 350 degrees F.
    Peel, core, and cut the pears and apples into large chunks. Place the fruit in a large bowl and add the zests, juices, sugar, flour, cinnamon, and nutmeg. Pour into a 9 by 12 by 2-inch oval baking dish.

    For the topping:

    Combine the flour, sugars, salt, oatmeal, and butter in the bowl of an electric mixer fitted with the paddle attachment. Mix on low speed for 1 minute, until the mixture is in large crumbles. Sprinkle evenly over the fruit, covering the fruit completely.
    Place the baking dish on a sheet pan and bake for 50 minutes to 1 hour, until the top is brown and the fruit is bubbly. Serve warm.

    GQ Magazine has a great this month about how to revamp your office wardrobe.  So for our fabulous Culturisto readers- here is some of their advice!  For the photo above: wear a pocket square!! And make it interesting in a plaid print!  Other great accessories to wear at work: tie clips, cuff links, or a nice watch.



    Brown is the new Black!!  Instead of pairing your suit with the normal black belt, black shoes--- try brown! It will instantly add a bit of 'cool' to your wardrobe!


    Instead of the basic light colored shirts- try something bold!  Wear a bright colored shirt with your traditional suit.  Let the color do the talking and tone the rest of your outfit down.


    Don't be afraid of the three-piece suit! We here at the Culturistas are huge lovers of the three piece suit. It adds a classic elegance to anyone's wardrobe- plus you still look very put together with no jacket!

    Style Profile: Chuck Bass



    Chuck Bass, played by Ed Westwick, is a fashion risk-taking member of the Upper East Side social elite.  He often wears flamboyant outfits, including bright colors, bow ties, argyle and suits.  We love his crazy personal style because it always keeps us entertained!



    This past season on Gossip Girl, Chuck has been channeling Gordon Gekko from 'Wall Street.'  He wears french cuff shirts with white collars, suspenders and slacks.  To dress like Chuck: don't be afraid of bright colors!  Orange, purple, red and blue are all favorites of Chucks.  Other key pieces in Chuck's wardrobe: trench coats, three piece suits and fun accessories like scarves, bow ties and suspenders.

    Recipe of the week: Curried Sweet Potato Latkes



    If you are looking for a new way to spice up your holiday menu this is just the recipe for you. It takes a traditional Hannukah dish, potato pancakes and gives you an alternative spin with an Indian flavor. Not only are potatoes tastier but also a bit more nutritious. Preparing this dish should take approximately 30 minutes.

    Ingredients

    * 1/2 cup all-purpose flour
    * 2 teaspoons sugar
    * 2 teaspoons curry powder
    * 1 teaspoon baking powder
    * 1 teaspoon brown sugar
    * 1 teaspoon ground cumin
    * 3/4 teaspoon salt
    * 1/2 teaspoon cayenne pepper
    * 1/4 teaspoon pepper
    * 2 eggs, lightly beaten
    * 1/2 cup milk
    * 4 cups grated peeled sweet potatoes
    * Oil for frying


    Directions

    * In a small bowl, combine the first nine ingredients. Stir in eggs and milk until blended. Add sweet potatoes; toss to coat.
    * Heat oil in a large nonstick skillet over medium heat. Drop batter by heaping tablespoonfuls into oil; press lightly to flatten. Fry for 3-5 minutes on each side or until golden brown, adding oil as needed. Drain on paper towels. Yield: 24 latkes.

    Restaurant Profile: Square One Dining LA



    Square One Dining is a little restaurant in an odd section of Hollywood that you might pass right by and never know of it's epicurean delights.  Except if you drove by on Saturday or Sunday mornings when a line forms out the door.  And trust me it is worth the trek to East Hollywood and waiting in line to taste the food.


    From Top Left: Two scrambled eggs with toast, salad and canadian Bacon.  Brioche French Toast with Strawberries and Whipped Cream.  Breakfast Sandwich with sausage patty or bacon, two scrambled eggs, frisee, tomato and aioli.  Lunch Chicken Sandwich with portabello mushroom confit, truffled aioli, gruyere cheese, arugula and shaved red onions.

    The breakfast and lunch specialties will surely have you talking. The ingredients are fresh, the food creative and delicious and the ambiance is quaint and friendly.  The prices aren't bad either! They utilize organic, local, and small farm produce when possible AND all of our meat products are hormone free.  All great reasons to support this restaurant!  

    Tip: If you hate waiting for a table try to go a bit later in the day- don't worry breakfast is served all day. 
    Tip: And get a table on the back patio- it's super cute!

    Crazy for CREMA


    After an evening of dining at Crema, your taste buds will be thoroughly aroused and your flavor for Mexican food truly refined. This romantic and unassuming restaurant is tucked away in the heart of Chelsea. With dim lighting and intimate tables, Crema is great for two or larger parties. If you arrive before 7 PM there is a 2 for 1 happy hour special and complimentary chips are served. This is strongly recommended for all you Recessionistas out there. The menu is somewhat pricey, so it is best to go after payday. Chef and owner Julieta Ballesteros has managed to present Mexican cuisine with a modern spin while maintaining old world flavors.

    Mad Men Costume Obsessed


    The series 'Mad Men' on AMC, set in 1960s New York, follows the lives of the ruthlessly competitive men and women of Madison Avenue advertising.  While I love the show in general, it is the costumes that draw my attention.


    Betty and Don Draper, played by January Jones and Jon Hamm

    In an interview with Glamour Magazine, 'Mad Men' costume designer Janie Bryant gives her advice on how to dress like the Mad Men stars without looking like you are wearing a costume:

    "You know what’s really fun, is to get a great vintage blouse of the period, with some pin tucks or ruffles, and wear them with skinny jeans. I also love twinsets, which are just so iconic for the period, and a pencil skirt is perfect, or also finding a great shirtwaist dress. Definitely if you buy something, a piece from the period, I always say mix it with very contemporary pieces, whether it be a modern shoe or skinny jeans or high waisted trouser jeans. I’m a strong believer in mixing a lot of pieces." -Janie Bryant



    Janie Bryant explains her inspiration for Betty Draper:
    "My grandmother. My grandmother, her name was Etoille Estelle Lillard, so she was "Double Star Lillard," which I loved. She was from the South where they couldn't really pronounce her name, so they always called her “Et-oh-lee” and she was really part of that society. My grandmother, she was an amazing amazing designer and seamstress herself. And she had an apron for every event that matched every dress--she had cocktail aprons and everyday aprons and she designed and built her own clothes and she was just such a lady. And also I would have to say Grace Kelly for Betty Draper as well. Those are really my two main inspirations."

    Janie also explains her inspiration for Joan's character:
    "With Joan, I just see her as such a sassy gal. She just tells it like it is, or rather tells it how she sees it, and that really inspired me to use a lot of strong colors for her in her palette. They're so indicative of the period anyway, so it’s been fun to use mustards and moss greens and the brighter jewel tones. And the great thing about Mad Men is, it’s not just Joan that has this beautiful hourglass figure, there’s every single body type represented on that show. It’s not like there’s just one image of beauty. There are all different body shapes and sizes. It’s about embracing your uniqueness instead of self-criticizing."
